Ingredients
1 can apricot in syrup, drained and chopped
2 tablespoon fresh cilantro chopped
½ tablespoon olive oil
2 tablespoons red onion chopped
1 teaspoon freshly grated lime peel
½ tablespoon lime juice
½ distilled white vinegar
1 jalapeno seeded and chopped
¼ teaspoon salt
1/8 teaspoon ground white pepper
¼ cup ground cumin
Preparation
Combine all the ingredients, apricots, cilantro, onion, olive oil, lime peel, lime juice, white pepper, cumin, jalapeno, salt and vinegar and mix it well in a bowl. Mix it gently. Cover the mixture properly and refrigerate. |
