½ Ib salt codfish 2 tablespoon baking powder 1 garlic clove crushed 2 cups all purpose flour 1 tablespoon annatto oil 1 cup water Vegetable oil for frying
Method :
Soak the salt cod fish in water for 6 hours. Keep changing the water. Change the water and boil the fish for 5 minutes. Drain the water, remove the skin and bones and shred it. Sieve the flour and baking powder in a bowl. Add annatto oil, garlic and water and mix it well. Make it into a smooth batter with no lumps. Add shredded fish and again mix it. Heat the oil in a heavy saucepan and fry the mixture till golden brown, remove the Bacalaitos on a paper towel to drain the excess oil.
