Chicken and Cheese Crescent Chimachangas
Ingredients :
2 ½ cup cooked and shredded chicken
1/2 cup salsa
16 ounces crescent dinner rolls
1/2 cup onion – chopped
3 tablespoons oil
2 cups cheddar cheese -- shredded
2 garlic cloves – minced

Description :
Heat oven to 350 degree. Grease a large cookie sheet and IN large cookie sheet. In a
skillet put oil, garlic and ginger. Cook, onions till they are soft and translucent. Add chicken to it and cook it over low heat. Stir occasionally and remove from heat. Divide the dough into 8 rectangles; press each portion to conceal all the perforations. Sprinkle 2 t of salsa on each rectangle to within ½ inch of edge.
Blend 1 cup of cheese into chicken mixture. Put 1/3 cup of chicken mixture into half of each rectangles. Starting from the shortest side roll up the rectangles and pinch the end properly to make it compact and sealed. Place them on greased cookie sheets with the seam side down. Bake them at 350 F till they are golden brown. Remove them from the oven and sprinkle
about 2 t of remaining cheese and again place it in the oven. Bake for 1 or 2 minutes more
or till the cheese melts.
The Chimachangas are ready and one can serve with additional salsa and sour cream. |
