Ingredients :

   30 ounces black beans
  1 can chicken broth
  1 large jalapeno deseeded and chopped
  Fresh lime juice
  4 garlic cloves, finely chopped
   ½ teaspoon powdered cumin
  Fresh cilantro chopped
  1 cup monetary jack cheese
  1 tablespoon of olive oil

Preparation :

Rinse and drain the black beans. Over medium-high heat, heat oil in a large saucepan. Sauté garlic, chili and cumin for 30 seconds. Add beans and broth and cook it for 5 minutes, keep stirring occasionally. Mash the beans with potato masher. Let it cook for 20 minutes more till it becomes thick. Season it with lime juice, salt and pepper. Serve it in a bowl with cilantro sprinkled over it.
