Ingredients :
1 cup of olive oil
2 teaspoon salt
3 large heads garlic
1 teaspoon freshly ground black pepper
1 ½ cup sour orange juice( or ¾ cup fresh or bottled lime juice and ¾ cup fresh orange juice)
2 teaspoon dried oregano leaves
1 cup minced onion
3 tablespoon flat-leaf parsley, minced
Preparation :
Crush pepper, garlic and salt into paste with the help of mortar and pestle or using a large chef’s knife, using a flat surface. Put this paste in a bowl and mix it well with minced onion, oregano, parsley and sour orange juice. Keep this mixture aside for thirty minutes. Heat oil in a small saucepan over medium heat until it is hot. Remove the sauce pan from the heat and carefully put the garlic orange juice in the mixture and mix it together till the mixture blends properly.
Again put the sauce on medium high heat and bring to rolling boil. Taste it and add the seasonings if required. Remove the sauce pan from the heat and allow it to cool. When it attains room temperature pour in a clean glass jar with a lid. If you want use the Mojo immediately or store in a refrigerator. It can be kept for several weeks and before making its use shake it well. |
